Overview & background

The clip-top jar is named in many markets after Bormioli Rocco's 'Fido' line, but the mechanism is older — a hinged wire bail that levers a lid down onto a rubber gasket, the same principle as a swing-top bottle. It gives a tool-free, reusable seal with no separate lid to lose.

Its real advantage for fermentation is that the gasket acts as a one-way relief: gas building up inside can burp past the seal, while air and contaminants are kept out — a self-regulating airlock in jar form.

Applications & industries

Sauerkraut, kimchi and lacto-fermented vegetables, pickles, sourdough starters, confit, kombucha and water kefir, infused spirits like limoncello, and general dry-goods storage. It is equally at home in commercial small-batch ferment brands and in refill-pantry retail.

Because it is so obviously reusable, it doubles as a display and storage jar in zero-waste shops and modern kitchens.

Design & construction

The jar has a wide mouth with a flat, ground sealing rim that the gasket presses against. A stainless or coated-steel wire bail is clipped to lugs on the neck and levers the separate glass lid down. The gasket — usually orange rubber or food-grade silicone — is a replaceable consumable.

Seal quality depends on rim flatness and gasket condition rather than on a vacuum, so the rim finish is the key dimension.

Handling & best practice

For active ferments, leave generous headspace and expect the seal to release gas; do not treat a clip-top as a hermetic, pressure-holding closure for carbonating unless rated for it. For shelf-stable preserves, the jars can be water-bath processed, but the gasket and bail are not a true vacuum seal, so follow tested recipes.

Gaskets perish over time and should be replaced periodically; advise customers to keep spares and to fit the gasket flat and clean before each use.

Manufacturing & quality

The jar body and the separate glass lid are press-and-blow formed; the sealing rim is finished flat to mate with the gasket. The wire bail and gasket are added at assembly.

QC focuses on rim flatness and on the fit of the bail mechanism so the lever closes with the right clamping force — too loose and it leaks, too tight and the glass lid is stressed.
