Dessert wines like ice wine are made from grapes picked frozen or shrivelled, yielding very little juice per vine, so they are extraordinarily concentrated and expensive. The slim half-bottle (and smaller) format reflects both how the wine is drunk — in small glasses — and how it must be priced.
The tall, narrow silhouette has become a category cue in its own right, telling the shopper this is a precious, sippable wine rather than a table bottle.
